PYAZ ALOO RECIPE

Ingredients:

Small onions peeled- ½ cup

Small potatoes- 1 cup

Caramelised sugar- 1 tbl.sp.

Garlic- 10 flakes

Green chillies- 1 tsp

Turmeric powder- ¼ tsp

Chilli powder- 1 tsp

Dhania powder- 1 tbl.sp

Jeera powder- 1 ½ tsp

Cinnamon-  1 inch piece

Cloves- 3

Thick tamarind extract- 2 tbl.sps.

Salt- as required

Oil- enough to deep fry

Ghee or butter- for frying

Preparation Method:

  1. Boil potatoes in water under pressure. (in pressure cooker)
  1. Peel the skin and prick all over with fork.
  1. Deep fry in hot till brown. Drain and keep aside.
  1. Peel small onions and slice it. Peel garlic, cut into thin round pieces.
  1. Slit green chillies into two.
  1. Heat oil or ghee in a pan. Tamper with aniseed, fry green chillies and garlic.
  1. When it is done add onions and fry for one or two minutes.
  1. Add other powders, fry for a minute then add caramelized sugar.
  1. Pour tamarind extract, salt, turmeric with fried potatoes.
  1. Mix gently and reduce the flame.
  1. Keep frying till masala coats potatoes and ghee is separated from curry.
  1. Powder cinnamon add clove, mix in a tea spoon of hot ghee, pour over the curry.
  1. Mix gently and serve hot with rice or chappathis.

MIXED VEGETABLES KURMA RECIPE

Ingredients:

Small onions peeled- ½ cup

Garlic -7 or 8 flakes

Green chillies- 10

Coriander powder- 1 tsp

Cashew nuts- 10 or 12

Cardamom- 3

Ginger- 1 inch piece

Salt- to taste

Coconut extract- from ½ coconut

Mixed diced vegetables (potatoes, carrot, beans, cauliflower and peas)- 5 cups

Tomatoes- 5

Big onion- 2

Garlic- 7flakes

Oil- 1 ½ tbl.sps

Grind together:

Scarped coconut- ½ cup

Poppy seeds- 2 tsps

Preparation Method:

  1. Heat little oil in a pan and fry small onions, garlic, cardamom, green chillies and cashew nuts.
  1. Grind it with ginger and coriander powder.
  1. Take coconut extract from half a coconut.
  1. Cut big onions, garlic and tomatoes finely.
  1. Heat oil and ghee in a pan, add ground mixture and fry for a minute.
  1. Add tomatoes and fry till skin is peeled, then put mixed diced raw vegetables and sauce for few minutes.
  1. Pour coconut extract and pressure cook till the vegetables become soft.
  1. After removing the lid, add fried onion and garlic.
  1. Now put the coconut and poppy paste to this. Boil for two minutes and remove from fire.
