Grilled Vegetable Open Sandwich Recipe

Ingredients:

4 slices sandwich bread. Toasted
1 tomato, sliced
1 onion, slicec
1 cabsicum, sliced
½ cup chopped coriander leaves
Salt and pepper to taste

For the sandwich spread:

2 tsp oil
2 green chilies, chopped
1 inch ginger, chopped
½ tsp red chili powder
5 tsp tomato puree
5 tsp tomato ketchup
Salt, pepper
2 tsp chopped corinander leaves
8 canned cherries, de-seeded and
1 cup grated cheese
Preparation Method:

1. For the sandwich spread, heat the oil in a pan; add the green chili and ginger to it.

2. Add the tomato puree, red chili powder, salt, pepper and coriander leaves. Mix well. Remove from heat once cooked.

3. Spread the sandwich spread on each piece of toast.

4. Place the onion, tomato and capsicum rings on top.

5. Dot with tomato ketchup. Garnish with coriander leaves, cherry and the  grated cheese.

6. Bake on a greased tray, in a preheated oven at 200 degree C for 10 minutes.

7. Cut in triangles and serve hot.
