Kebab-E-Bahar

Ingredients:

250 gm paneer, cut into 1×1 ½ cubes
1 large capsicum
2 medium size onion, cut into 1 cubes
2 medium size tomatoes. De-seeded, cut into 1 cubes
4 green chilies, slit in half
1 piece of ginger, julienned

For the marinade:

1 tsp chaat masala
½ cup thick yoghurt
½ tsp salt
3 drops orange food color
Juice of half a lemon
1 tsp red chili powder

For the chaunk

1 tsp butter
1 tsp cumin seeds
1 large onion, grated
1 large tomato, de-seeded and pulped
½ tsp each of coriander powder, mango powder, red chilli powder

Garnish:

1 tsp fresh cream
4 tsp chopped coriander leaves
2 tsp garam masala powder
Preparation Method:

1. Marinate the paneer and vegetables in the marinade ingredients for 1 hour

2. For the chaunk, heat the butter, add cumin seeds. Let the seeds crackle a little.

3. Add the grated onion, the tomato pulp, the spices and cook well.

4. Add the marinated paneer and vegetables. Stir-fry. Check the seasoning.

5. Spread on a greased baking dish and bake in a preheated oven at 200 degree C for 10 minutes.

6. Sprinkle garam masala, garnish with cream and the coriander leaves, and serve hot
