Tawa Tawalchi Recipe
June 6th, 2008Ingredients:
1 large carrot, cut in thick strips
10-12 french beans, cut diagonally
2 bitter gourds, sliced
14 ladyfinger(okra), cut in strips
8-10 small florets of cauliflower
1 large capsicum, cut in thick strips
4 medium size potatoes, cut in thick strips
For the gravy
3 tsp oil
2 piece ginger, chopped
4 green chilies, chopped
3 medium size onion, peeled, boiled, made into a paste
2 large tomatoes blanced, made to paste
1 tsp coriander powder
½ tsp mango powder
½ tsp turmeric powder
1 tsp red chili powder
1 tsp chaat masala
2 tsp chopped coriander leaves
Garnish
Chopped coriander leaves
Lemon juice/lemon wedges
Chaat masala
Green chilli and ginger juliennes
Preparation Method:
1. Blanch the carrots and beans. Deep fry the cauliflower, ladyfingers, potatoes and bitter gourds. Drain well on paper.
2. For the gravy, heat the oil in a kadhai; add the ginger and green chili. Add the onion paste and sauté well. Add the tomato paste and again sauté well. Add the spices and cook well. Keep aside
3. In another pan, heat very little oil. Add carrot, beans, cauliflower, potatoes, bitter gourd, ladyfinger and capsicum. Saute well.
4. Add the prepared gravy to it and mix well. Adjust the seasoning if required.
5. Serve hot garnished with coriander leaves, lemon wedges, green chili and ginger juliennes. Also sprinkle chaat masala on it.
