Vegetable Roly – Poly Mini Buns Recipe

12 mini size buns
3 tsp oil
3 green chilies, chopped
2 piece ginger, chopped
1 onion, chopped
1 tomato, chopped
1 capsicum, chopped
2 tsp chopped spring onion
4 canned baby corn, chopped
3 tsp chopped paneer cubes
3 tsp tomato ketchup
2 tsp tomato puree
2 tsp chili sauce
Salt and pepper to taste
4 tsp chopped coriander leaves
Garnish:
Grated cheese
Chopped coriander leaves
Condiment:
Tomato Ketchup
Preparation Method:
1. Cut the buns from top and scoop out the center, creating a hollow. Chop the scooped out portion of the buns and keep aside.
2. Heat the oil in a pan; add chopped green chili and chopped ginger to it. Add the onion and sauté well, then add the tomatoes and fry well.
3. Add the capsicum, paneer and baby corn and sauté well. Also add the scooped out portion of the bun to the filling and mix well.
4. Add the tomato ketchup, tomato puree, chili sauce, salt and pepper. Mix well. Add the coriander leaves. Spoon this filling in the bun and garnish with coriander leaves and cheese.
5. Place the filled buns on a greased, flat pan. Heat the pan for 10 minutes or bake on a greased tray in preheated oven at 200 degree C for 5 minutes.
6. serve hot with tomato ketchup if desired.
