Fresh mint chutney with yoghurt

Chutneys are easy to make, involving blending or pounding ingredients together, and then boiling to thicken.

Item required
2 tablespoons desiccated coconut
2 tablespoons hot milk
V4 cup chopped, fresh mint
1 onion, finely chopped
‘A green capsicum (pepper), finely chopped
1 cup (250 ml) plain yoghurt
Preparation method
1 Soak coconut in milk for 30 minutes.
2 Add mint, onion, capsicum and yoghurt, stir until combined.
MAKES 2 cups (500 ML)

Prawn fritters

This prawn fritters recipe is a fantastic recipe and very tasty recipe too. It is like by all non-vegetarians.

Item required
500 g small cooked prawns, shelled
1% cup (60 g) rice flour
I% cup (60 g) self-raising flour
1 tablespoon cornflour
1 teaspoon baking powder
% cup (90 g) semolina flour
cup (60 g) besan (chickpea flour)
1 large onion, finely chopped
thin slice ginger, finely chopped
1/2 capsicum (pepper), finely chopped
3 spring onions, chopped
1/4 teaspoon ground turmeric
1/4 teaspoon ground cumin
1/4 teaspoon chilli powder
2 eggs, beaten
water as required for mixing
Preparation method
1 cup (250 ml) oil 1 Combine prawns in a bowl with rice flour, self-raising flour, cornflour, baking powder, semolina flour, besan, onion, ging-, capsicum, spring onions, turmeric, cumin and chilli powder.
2 Add beaten eggs and sufficient water tc make a thick batter. Allow to stand for 15 minutes.
3 Heat oil in a frying pan over moderate heat. Drop tablespoons of batter, a few at a time, into the oil and fry on both sides un. golden brown. Drain on absorbent paper. Serve hot, with tomato sauce or chilli sauce as a dip.
