Prawn and cucumber curry

This is Indian cookery dish. Prawns and cucumber curry is very nice dish. The non-veg liker likes it very much.

Item required
750 g uncooked king prawns
1/2 teaspoon chilli powder
1 tablespoon curry powder
pinch turmeric
thin slice fresh ginger, cut into strips
1 clove garlic, crushed
3 tablespoons oil
1 large onion, thinly sliced
1 cup (250 ml) coconut milk
1 cucumber, peeled, seeded, diced
2 fresh green chillies, halved and seeds removed
1 tablespoon white vinegar
Preparation method
1 Peel prawns leaving tails intact, remove back vein.
2 In a bowl, combine prawns, chilli powder, curry powder, turmeric, ginger and garlic. Stand for 5 minutes.
3 Heat oil in a frying pan, saute onion until golden brown. Add prawns and saute for 4 minutes.
4 Add coconut milk, cucumber, chillies and vinegar. Bring to boil, stir over heat for 2 minutes.

Bombay whole fish curry

Generally, fish is a tasty food item to eat. All the people, who are non-veg likes to eat fish. Even the kids too, eat it happily.

Item required
60 g ghee
1 small onion, finely chopped
1 clove garlic, crushed
teaspoon grated fresh ginger
2 dried red chillies, cut lengthways and
chopped, seeds removed
1 tablespoon ground coriander 1 teaspoon ground turmeric 1 teaspoon ground mustard 1/2 teaspoon chilli powder
11/4 cups (300 ml) coconut milk
2 tablespoons fresh lemon juice
1 kg whole fish
Preparation method
1 Melt ghee in a frying pan. Saute , garlic, ginger, chillies, coriander, taunt mustard and chilli, for 3 minutes.
2 Add coconut milk and lemon juice. To boil, reduce heat to low, simmer uncovered until thickened.
3 Add fish, cover, cook over low heat fc - 20 minutes or until fish is tender; turn once, stir sauce occasionally.
SERVES 4 To 6
Srilankan chicken curry

Generally, Chicken is a favorite item for all to eat. This srilankan chicken curry is very tasty and all of them likes very much.

Item required
30 g ghee
1 onion, chopped
2 cloves garlic, crushed
3 to 4 fresh green or red chillies, cut
lengthways into thin strips and seeds
removed
1 teaspoon ground turmeric
1 tablespoon ground coriander
11/2 kg chicken pieces
21/2 cups (625 ml) coconut milk
2 tablespoons coconut cream
2 tablespoons fresh lemon juice
Preparation method
1 Melt ghee in a frying pan, add onion, garlic, chillies, turmeric and coriander. Saute for 2 minutes.
2 Add chicken pieces and coconut milk. Bring to boil, reduce heat to low, cover, simmer for about 45 minutes or until the chicken is tender.
3 Add coconut cream and lemon juice, simmer uncovered for 5 minutes.
SERVES 4 To 6
Curried prawns the shell

Item required
1 kg uncooked king prawns
1/2 cup (125 ml) oil
4 large onions, chopped
3 cloves garlic, crushed
2 to 3 fresh chillies, chopped and see=s
removed
3 cm piece green ginger, chopped
2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
50 g macadamia nuts, ground
4 cups (1 litre) water
1 tablespoon sugar
2 teaspoons fresh lemon juice
fried prawn crisps, to garnish
Preparation method
1 With a sharp knife, cut down the back the prawns through the shell to the vein. Pull out and discard the vein, leaving shell intact.
2 Heat oil in a frying pan, saute onion, garlic, chillies and ginger until onion is tender.
3 Add coriander, cumin, turmeric and nut_ saute 2 minutes. Add water, bring to the boil, cook uncovered until mixture has reduced by half.
4 Add prawns, sugar and lemon juice. Simmer uncovered until prawns are tender. Garnish with prawn crisps.

Madras duck curry

The duck curry is so delicious and tasty food. It is very easy to do. This food is to be like kids too.

Item required
60 g ghee
1 onion, thinly sliced
1 clove garlic, thinly sliced
2 or 3 chillies, halved lengthways and seeds
removed
3 tablespoons curry powder
1/2 teaspoon cumin seeds
2 kg duck, cut into serving-sized pieces
1 cup (250 ml) water
squeeze fresh lemon juice
3 tablespoons coconut cream
Preparation method
1 Melt ghee in a frying pan, add onion, garlic and chillies, saute until onion is tender. Add curry powder and cumin, saute
2 minutes.
2 Add duck pieces, stir to coat. Add water, bring to boil. Reduce heat to low, cover, simmer for 1 hour or until duck is tender.
3 Add lemon juice and coconut cream.
SERVES 4 To 6
